Devil's Food Chocolate Chip Muffins

YIELDS: 10 domed muffins (3 unlined)
COMMENT: Domed better w/o liners especially if filled the batter upto the rim. But also domed even with liners. Nice crack top. Texture's dry (maybe because i over mixed the batter or bake too long). Chips adds to the moistness and sweetness of not-so-sweet muffins
CHANGES:

EQUIPMENT: Black nonstick muffin tin
Lowest rack, insulated = 14min
Mid rack, insulated = 6min .... TOTAL: 20min
for only 350ยบ. Next time, check before 20min, coz they were a bit dry
PROCEDURE:
1. Combine dry, except sugar
2. Mix milk, sgar til dissolve. Add the rest of wet.
3. Pour wet to dry, i may have overstirrd til there's no dry stuffs visible; add chips
4. pour in tin. Better domed if ulined ( and fill till top). But also domed when lined and much better since crumbs sticks to tins and a bit hard to remove
5. Garnish with melted choclate (microwaved) then added around 1 t oil to smoothen the consistency (drizzable)
6. Drizzle using paper piping bag
RECIPE:
2 c unbleached all-purpose flour
2/3 c unsweetened cocoa powder
1/2-3/4 c sugar
2 t baking soda
1/2 t salt
1 1/3 c milk
1/3 c vegetable oil
2 eggs
1 t vanilla extract
1 c semisweet mini chocolate chips
1. Coat 12 muffin cups with nonstick cooking spray.
2. In a mixing bowl, add the flour, cocoa powder,sugar, baking soda, and salt; stir to combine.
3. In another bowl, add the milk, oil, eggs, and vanilla; whisk until blended.
4. Add the liquid ingredients and 1/2 cup chocolate chips to the dry ingredients.
5. Stir just until dry ingredients are moistened; be careful not to overmix.
6. Pour batter evenly into muffin cups.
7. Sprinkle remaining chocolate chips evenly over muffin batter.
8. Bake at 400 degrees for 20-22 minutes or until pick comes out clean.
9. Place pan on a wire rack to cool for a few minutes before removing muffins from pan.
