Marbled-chocolate Banana Bread

YIELDS: 2 (7X3) loaf pan
COMMENT: Moist, even if only 1/4 c margarine. The yogurt addes moistness. Slight chocolate flavor, didn't overpowerd the banana flavor. Sweetness just right.
CHANGES:
- less than 1/3 c sugar = instead of 1 c sugar (because i use sweetned yog,usually i add 1/2c per recipe)
- 2 c banana (.5L on FP/ 6 bananas) = 1 1/2 c
- 1/2 c (1 container) Neslte Sweetened yogurt = 1/3 c yogurt
- 3oz semi sweet chocolate = instead of 3 oz chips
EQUIPMENT: Mid rack, 2 loaf pans (not insulated)
PROCEDURE:
1. Combine dry
2. Cream margarine, add sugar. Add beaten eggs. Add yogurt then mashed banana. The mixture looks like oatmeal with strips of eggwhites.
3. Fold wet to dry
4. Combined some plain batter into melted chocolate (shouldv'e put more batter coz I got only few chocolate batter) Both plain and choc mixture was thick
5. Pour plain batter on gr and fl loaf pan ( i put too much base), dollop chocolate.
6. Pour plain again (fewer batter this time) dollop remain chocoalte batter.. Top with remain plain batter.
7. Use spoon to marble.. moving from bottom to top of batter.
8. Bake 350º around 35-40min. Foiled onced domed and cracked.
9. Cool in pan probably around 30min
RECIPE:2 cups all-purpose flour
3/4 teaspoon baking soda
1/2 teaspoon salt
1 cup sugar
1/4 cup butter, softened
1 1/2 cups mashed ripe bananas (about 3 bananas)
2 eggs or 1/2 cup egg substitute
1/3 cup sour cream or plain low-fat yogurt
1/2 cup semi-sweet chocolate chips
cooking spray
1. Preheat oven to 350°F.
2. Combine flour, baking soda and salt, stirring with a whisk.
3. Place sugar and butter in a large bowl and beat with mixer at medium speed until well blended (about 1 minte).
4. Add banana, egg sugstitute, and yogurt; beat until blended.
5. Add flour mixture, beat at low speed just until moist.
6. Place chocolate chips in a medium microwave-safe bowl and microwave at HIGH 1 minute or until almost melted, stirring until smooth.
7. Cool slightly.
8. Add 1 cup of batter to chocolate, stirring until well combined.
9. Spoon chocolate batter alternately with plain batter into an 8 1/2 x 4 1/2-inch loaf pan coated with cooking spray.
10. Swirl batters together using a knife.
11. Bake at 350°F for 1 hour and 15 minutes or until a wooden pick inserted in center comes out clean.
12. Cool 10 minutes in pan on a wire rack; remove from pan.
13. Cool completely on wire rack.
