Chung Sik Bao (Chinese Buns) 4th : Pizza Bread & Spring Onion Roll

YIELDS:
6 - 100g = made Spring Onion Rolls
10 - 60g = made Pizza Bread

COMMENTS:
SPRING ONION - topping for spring onion was too much even if i halved the recipe. Topping too much that butter melted and oozed drips out of the bread into the baking sheet. A little salty. Next time, may add onion,garlic, some garlic powder perhaps..
PIZZA BREAD - Softer texture than spring onion's, maybe because i tore a piece of bread (i cut using knife on spring onion roll). Topping just enough. Didn't taste the oregano, cumin, cayenne i added while cooking the topping. Because i use too little
**Dough didn't rise well as i expected....

CHANGES:
double the recipe for bread (use margarine for bread)
Halved the spring onion roll recipe, but still too much filling: 1/4 c butter, 1 t salt (too salty), 1 t chicken powder, 1 egg
Pizza Bread, i use: 5 clove garlic, 1 1/2 S onion, 1 S green bell pepper, 3/4 M red bell pepper, 2 hotdogs. Add spices: oregano, cumin, cayenne, but too few to have a taste

EQUIPMENT:
Mid rack - light nonstick cookie sheet ( 7 pcs of 60g roll, formed into a knot = pizza bread)
Lowest rack - dark nonstick cookie sheet ( 6 pcs of 100g = spring onion; & 3 pcs of 60g round roll = pizza bread)
**Exchange both pans halfway through baking, once browning on sides (spring onion roll was browning)

PROCEDURE:
1. Mix dry ingr before going to church (use only 200g of bread flour, reserve the other 200g on another bowl) 2. Add wet ingr after church (add melted margarine, first time i use this step. Before, i always add the RT butter halfway thru kneading the dough). Mix using spatula, let the dough stand 10min
3. Knead in KA, adding 1/2 c bread flour, from 200g rserved, gradually (bec i think it looks wet) Then finally adding 2T bread flour when i was about to finished kneading so it won't be as sticky
4. Knead few minutes on floured table. Didn't shape nicely into a ball. and place in gr KA bowl. I let it rest for 30min. But i don't think it rose
5. Formed using bread flour from 200 g (didnt use all). First time, i made the right grams and produce the right/specified amt of dough in the recipe. REst the dough from 10:30(done shaping all) - 11:40 (1 hr 10min)
6. Cook pizza bread ingredients. Add spices: oregano, cumin, cayenne.
7. Cream butter with salt and chicken powder. Add egg (beaten) curdled coz my butter's still cold when i add the egg. Then i added the "tsang" I let the mixer beat more than 15 min til it comes together.
8. Beat less than 1/2 of 1 egg and add cpl drops of water and i dash salt, whisk and brush on top of rolls, had some excess.
9. Spring roll: cut X on top of 100g and place filling in between the cut (too much filling). Pizza Bread: cut X on 3 rolls, while just place filling on top of 7 uncut-knot rolls
9. Bake 325º-325º 30 min til ight brown


RECIPE:
CHUNG SIK BAO (CHINESE BUNS)
200 g bread flour (1 1/2c)
100 g all purpose flour (3/4c)
5 g instant yeast (1 1/4t)
50 g sugar(1/4c)
30 g powdered milk (1/4c)
15 g bread improver (2T)
7 g salt (1t)
120 ml water (8T)
1 whole egg
1 yolk
30 g butter,chilled (2T)


If doubled:
400 g bread flour (3c)
200 g all purpose flour (1 1/2c)
10 g instant yeast (2 1/2t)
100 g sugar(1/2c)
60 g powdered milk (1/2c)
30 g bread improver (4T)
14 g salt (2t)
240 ml water (16T)
2 whole egg
2 yolk
60 g butter,chilled (1/4c)


1. In a bowl, combine some of bread flour, all purpose flour, yeast, sugar, milk, bread improver,salt. Stir to combine
2. Add the water, eggs, mix and knead at low speed about 5min. Incrase speed to medium or MH and beat for another 7min. Turn off mixer, make window pane test
3 Add the cubed butter towards the end for finer texture. Beat again at H for 1-2min. Finished off knading a few manual strokes.
4. Form into a ball. coat lightly with oil. Place in gr bowl. Cover with plastic. Allow to rest 30min.
5. Cut into desired size, about 50 (12pcs) to 60 g (10pcs) or rolls. Shape
6. Proof 1-2 hrs til double. Bake 350º - 375º 10-15min

SPRING ONION ROLL

1 recipe of Bread dough
400 g scallion (green onions), chopped
2 eggs
2 t salt
2 t chicken powder
1/2 c butter

1. Mix all ingr together and blend well.
2. Form 6pcs 100g of dough into a ball.
3. Allow to dbl in size, brush egg wash. Make X on top of surface
4. Top w/ spring onion filling. Sprinkle with sesame seed
5. Bake 350º 10-15min

PIZZA BREAD
1 recipe of Bread dough
Ketchup or pizza sauce
Grated Mozerella or Cheddar
Pepperoni, salami, ham, italian sausage, hodog slices, etc
basil, oregano, thyme,etc
minced garlic
sliced onions
green and red bell pepper, chopped

1. Form dough into 12pcs 50 g ovals. Proof
2. Eggwash, cut slit in center. Fill
3. Bake 350º 10-12min
