Kung Pao Chicken

YIELDS: 2 Chicken breast, 1 brocolli
COMMENT: Hoisin Taste, sauce not thick enough (too many sauce) peanuts doesn't taste good. Not as spicy
CHANGES:
Steam broccoli = instead of cooking with fresh ginger and oil
1/2 t cayenne = for 1 t crushed red pepper
1/2 c = chicken stock from ma's chicken bones
2 t cornstarch = 1 t (not thick enough)
EQUIPMENT: nonstick pan
PROCEDURE:
1. Cut , pound chicken (but no need to pound coz chicken not hard) season S&P
2. Place boiling water on steamer, put veggies in, let it steam approx 5min (were bright green) plunge in iced water ( i made early in the morning)
3. Cook ginger, garlic with no oil. Add all of chicken, sprinkle cayenne. cook til meat's white
4. Add combined liquid (remove some of broth and dissolve in it cornstarch)
5. Let it boil a few min, then add dissolve starch
6. Add veggies, coat well, turn off heat
7. Place in serving bowl. Sprnkle chopped nuts
RECIPE:
1 tablespoon canola oil, divided
4 cups broccoli florets
1 tablespoon ground fresh ginger, divided
2 tablespoons water
1 teaspoon crushed red pepper
16 ounces skinless, boneless chicken breasts, cut into 1/4-inch strips
1/2 cup chicken broth
2 tablespoons hoisin sauce
2 tablespoons rice wine vinegar
2 tablespoons soy sauce
1 teaspoon cornstarch
4 garlic cloves, minced
3 tablespoons coarsely chopped salted peanuts
4. Return broccoli mixture to pan - toss well to coat. Sprinkle with peanuts.
