Awesome Sesame Chicken

YIELDS: 2 chix breasts

COMMENT: very thick sauce ---> lessen cornstch next time. Tasted like hoisin. Baldo loved it

CHANGES:
lessen the sauce ingr (use only 2/3 the full amount)
2/3 c water
2 T hoisin
1 1/2 T brown sugar
2 1/2 t soy sauce (i use less sodium)
1 t oil
2 clove garlic,minced (same amount)
1 1/2 T cornstarch --->too much
no oil for deep frying

EQUIPMENT: nonstick pan

PROCEDURE:
1. Clean chix slice to bite size. Mix (full amount) of marinade and marinate chix in uncovered more than 1 1/2 hrs in the fridge
2. Cook sauce in saucpan
3. Cook chix in a little oil ------> dont need to put some next time coz it didnt stick at all
4. The marinade was absorbed by the chix so none left. Cook chix in batches. The place chix in serving plate
5. Heat the sauce again, add green onions on last seconds of cooking. Pour on chicken
6. Topped with toasted sesame seed

RECIPE:

3 whole boneless chicken breasts

Marinade
2 tablespoons light soy sauce
1 tablespoon cooking wine or dry sherry ----> use rice wine
3-5 drops sesame oil
2 tablespoons flour
2 tablespoons cornstarch
2 tablespoons water
1/4 teaspoon baking powder
1/4 teaspoon baking soda
1 1/2 teaspoons brown sugar
1 teaspoon vegetable oil

Sauce

1 cup water
3 tablespoons hoisin sauce
2 tablespoons brown sugar
4 teaspoons dark soy sauce
2 teaspoons vegetable oil
2 cloves garlic, minced
2 tablespoons cornstarch
1 green onion, thinly slice
2 tablespoons toasted sesame seeds
3 1/2-4 cups peanut oil (for frying)

1. cut the chicken into small, approximately 1-inch cubes.
2. Add the marinade ingredients and marinate the chicken for atleast 20 minutes.
3. While the chicken is marinating, prepare the sauce.
4. Mix together all of the sauce ingredients except for the green onion.
5. Pour them into a small pot and bring to a boil.
6. Turn the heat down to a low and keep warm while you are deep-frying the chicken.
7. Heat oil for deep-frying.
8. When the oil is ready, add the marinated chicken a few pieces at a time, sliding them into oil carefully, and not to overcrowd.
9. Deepfry until golden brown.
10. Remove the cooked chicken pieces from the oil and drain on paper towels.
11. Repeat with the remainder of the chicken.
12. Just befoe you are finished deep-frying, bring the sauce back up to a boil.
13. Mix in the green onion.
14. Place the chicken on a large platter and pour sauce over.
15. Sprinkle with the sesame seeds.
16. Serve over rice.
