Best-Ever Banana Bread

COMMENT: Moist, not sweet banana bread, nice texture. Bake 36min (no crumbs clinging). Next day (chilled) reminds me of Goldilock's nice texture but less moist. Good texture accdg to achi, maybe because i didn't use too many banana which makes the bread wet
CHANGES:
1/2 c sugar instead of 1 c
add 1 t vinegar to 1/4c,1T of milk
no nuts added, no banana extract
use 5 S banana (.25L in my FP =1c)

RECIPE:
2 medium ripe bananas, mashed (I puree) (1c)
2 eggs
1 3/4 cups unsifted all-purpose flour
1 cup granulated sugar
1 cup chopped walnuts
1/2 cup vegetable oil
1/4 cup buttermilk, plus
1 tablespoon buttermilk (I use fresh or powdered)

1 teaspoon baking soda
1 teaspoon vanilla
1/2 teaspoon banana extract (optional)
1/2 teaspoon salt
1. Preheat oven to 325 degrees.
2. Grease and flour a 9x5-inch loaf pan.
3. Combine all ingredients in a large bowl and mix well.
4. Transfer to prepared pan.
5. Bake until top is golden brown and splits slightly, about 1 hour and 20 minutes.
6. Slices well.7. Do not double recipe.
