The Best Brownies Ever!!

YIELDS: 1 9x9 pan
COMMENT: Oily between paper and pan. chopped chocolate = sink at bottom ( think its better to melt all chocolate isntead of stirring half of it in the batter) Sides were higher than the sunken center. At room temp: chewy, sticky and oily. When chilled, top part were moist and chewy, bottom part were sticky candy like texture and dense. Overall, these are great texture/tasting brownies, dense and chewy, a bit sweet
CHANGES:
1/2 c chopped cashew for sprnkle on top instead of pecans into the batter
12 oz semi sweet chocolate chopped for 120z chips
EQUIPMENT:
Lowest rack (not insulated) 40min @ 325º. Then mid rack 18 min for 350º I baked these together with
PROCEDURE:
1. Melt margarine, 6 oz chcoclate, h2o in microwave
2. Whisk in sugar grad, add vanilla
3. Slwly whsk in beaten egg (didnt' produce bubbles - was smooth)
4. Grad add dry. STir in 6oz chopped chocolate
5. Place in lined (then oiled) pan. Sprnkle cashew (w/c some sinked into the batter, even if this is a thick batter)
6. Bake 325º 40 min, Were still jiggly so i upped the timp 350º for 18min, til center's set
7. Sides were darker brown than lighter/flatter center
8. Tried to cut the brownies once cooled at room temp, but were impossible , oily, stiky. The bottom (melted choclate) stick to the paper (even if i oiled it)
9. But once chilled, it was easier to cut

RECIPE:
3/4 cup all-purpose flour
1/4 teaspoon baking soda
1/4 teaspoon salt
3/4 cup sugar
1/3 cup butter
2 tablespoons water
12 ounces semi-sweet chocolate chips
1 teaspoon vanilla
2 large eggs
1/2 cup chopped pecans (optional)
1. Preheat oven to 325°F; grease a 9-inch square baking pan.
2. In a small bowl, combine flour, soda and salt; set aside.
3. In medium saucepan, combine sugar, butter and water. Bring just to a boil. Remove from heat.
4. Add 1 cup chocolate chips and vanilla.
5. Stir until chocolate melts and mixture is smooth.
6. Add eggs; one at a time, to the mixture; mix well.
7. Gradually blend in the flour mixture.
8. Stir in remaining 1 cup chocolate chips and the pecans.
9. Spread in the prepared pan.
10. Bake for 30-35 minutes.
11. Cool completely before cutting into squares.
