Whole Wheat Oat Banana Bread

originally a bread recipe, but i made them into muffins intead

YIELDS: 12 regular sized muffins; 6 jumbo

COMMENT: Suepr sweet, distinct honey taste. Wheat germ was unnoticeable. Moist inside, flat muffins (some flying saucer top) - both lined and unlined




CHANGES:
Doubled the recipe
1 1/2c wheat bran
2 1/2c ww
2 t soda
2 t pwder
1/2 c chop nut
1 c honey
4 T oil
2 eggs
1/2 c mlk
1 T van
6 M banana (3.15c)
**1 M banana = .5c

1c bran; 1/2 c germ = for 1 1/2 c wheat bran
regular milk instead of soy milk
1/4c c wlnut, 1/4 c raisin = 1/2 c walnut

8 bananas (.75L- .8L in FP or 3 1/4c)

Made Streusel (enough for 6 reglar sized muffins, topping was full)
2T brown sgar
1/2 T AP
1/8 t cinnamon
10g butter
2 T chopped almond
combine br, ap, cin. Cut in butter, stir in nuts, Chill

EQUIPMENT:
Mid rack - dark regular sized muffin
Lowest rack (inside oven) - Jumbo muffins
(outside oven) - The Best Brownies Ever!

PROCEDURE:
1. Mix dry
2. Mix wet, add pureed banana
3. Pour in tin, full. Sprnkl streusel
4. Bake 325ยบ, sides and top were getting brown, But pick's still moist. STayed flat top so i foiled (near the mid end of baking) It was hard to determine if cooked. Baked around 40min for both regular sized and jumbo
5. Removed when it was dark brown, some sides burnted, but inside still moist.

RECIPE:
3/4 cup oat bran
1 1/4 cups whole-wheat flour
1 teaspoon baking soda
1 teaspoon baking powder
1/4 cup chopped walnuts
1/2 cup honey
2 tablespoons olive oil
1 egg
1/4 cup almond milk
1 1/2 teaspoons pure vanilla extract
3 medium ripe bananas

1. Preheat oven to 350.
2. Oil bread pan.
3. Mix oat bran, flour, baking soda, baking powder and walnuts in a bowl.
4. Put honey, olive oil, egg, milk, vanilla extract and bananas in blender and mix completely.
5. Add to dry ingredients and mix well.
6. Pour into pan.
7. Bake for 30 minutes.
8. Cool completely.
