Broccoli and Tofu With Spicy Peanut Sauce

YIELDS: 1 huge white bowl

COMMENT: Tasted intersting at first. Sweet from the cider vinegar and peanut buttery taste. But after more bites the flaovr is too much that its sickening LOL. Not spicy coz i forgot to add cayenne (my sub for pepper flakes)

CHANGES:
3/4 of 240g Peanut butter ( i used le'fant, natural PB) which i measured in 1/2 c measuring
1 order tofu (approx 625 g) = instead of 1lb
1 broccoli floret (.45k) = 1 lb
* forgot to add red chili pepper flakes

EQUIPMENT:
Nonstick pan (big one)

PROCEDURE:
1. Pressed tofu to rmove the liquid, cut into cubes
2. Combine PB, water, honey, cider, soy in scpan, heat til PB melts
STir fry tofu (with a wee bit of olive oil) til slyt brown. Combine this with PB sauce in a bowl
3. Stir fry ginger, garlic, onion and stems (onions wilted, should've cooked the stems first) then add brocolli, cooked til bright green.
4. Pour in sauce with tofu, and stir fry til coated.
5. Place in dish, sprinkle scallion and peanuts

RECIPE:
1 lb firm tofu (that has been frozen, thawed, pressed and cut into chunks)
1 lb broccoli
1 1/2 tablespoons peanut oil or canola oil
2 cups onions
1 tablespoon fresh ginger
4 garlic cloves, minced
2 tablespoons soy sauce
3/4 teaspoon salt
2 scallions, minced
1/2 cup peanut butter
1/2 cup hot water
6 tablespoons cider vinegar
2 tablespoons soy sauce
3 tablespoons honey
red chili pepper flakes (to taste)

1. For the Sauce: Place peanut butter and water in a sauce pan, heat on low heat and whisk until mixture is uniform.
2. Add vinegar, honey, soy sauce and red chili flakes.
3. Set aside.
4. In a wok, heat half the oil, half the ginger, and half the garlic.
5. When hot, add tofu and stir fry for a few minutes.
6. Add tofu to sauce and set aside.
7. To wok add the rest of the oil, ginger and garlic.
8. When hot add the broccoli (which should be chopped into manageable bits, including the stems) and stir fry a few minutes.
9. Add the soy sauce and stir fry until broccoli is just tender and bright green.
10. Add sauce to broccoli and stir until everything is coated with sauce.
11. Serve immediately over steamed rice.
12. Top with lightly toasted chopped nuts and scallions.
