Anzac Biscuits (3rd)


Recipe #168

YIELDS: 32 cookies (small ice cream scoop, domed)

COMMENT: still crunchy and yummy, when molding with my palms it was a bit oilier than Anzac Biscuit (2nd)

CHANGES: double the recipe (i give lots to diko, coz she loved the 2nd time i made them)
2 c oats
2 c AP
1 c sugar
1 1/2 c dessicated coconut
1 c (half marg half butter) ---> using half margarine has no effect in taste
2 T pancake syrup
1 t soda
2 T boiling water

EQUIPMENT: Mid rack Dark large nonstick ( 17 cookies = 15min ) next batch Light nonstick (15 cookies = 15-20 min) 350ยบ ---> rotating pans halfway is important

RECIPE:

1 cup rolled oats (oatmeal in USA)
1 cup plain flour
1/2 cup sugar
3/4 cup desiccated coconut
1 tablespoon golden syrup (can substitute corn syrup, I believe)
125 g butter (4 oz)
1/2 teaspoon bicarbonate of soda (baking soda)
1 tablespoon water, boiling

1. Mix oats, flour, sugar and coconut together.
2. Melt syrup and butter together.
3. Mix the bicarb with boiling water and add to butter and syrup mixture. Add this to dry ingredients.
4. Place tablespoonsful of the mixture on a greased oven slide (cookie sheet). Bake at 150 - 160 C (300-325F) for 20 minutes.
