Eggplant and Cheese Casserole (3rd)

3RD time i made these. first, second

YIELDS: 1 (9x9) square pan

COMMENT:
Eggplant too big, it was sliced into circles.

CHANGES:
use 1 c evaporated milk for milk
1 K of eggplant plus less because there's some rotten eggplants
1 onion
Eden Cheese grated mixed w/ eggplant
Top w/ chevital's quickmelt cheese,grated

EQUIPMENT:
Lowest level (impovised rack) 350º 20min -->Good thing it didnt' burned at the bottom

PROCEDURE:
1. Made croutons the day before. Spread garlic margarine. Sprinkled onion, garlic powder, cayenne. Toast, cut
2. Place water let it heat when simmered. Add the eggplant, let it cook 10min (eggplant went soft but not mushy). Place onion, turned off heat. Let it sit,closed lid
3. Dissolve flour and seasoning in a little evaporated milk before pouring all milk --> mixture didn't turned lumpy like it used to
4. Combined drained eggplant, croutons and grated cheese --> should mush the eggplants
5. Pour wet ingredients, mixed well.
6. Sprinkled grated cheese
7. Baked 350º 20min , uncovered all the way

RECIPE:


1 large eggplant, peeled and diced into 1 1/2 " cubes
1/2 cup diced onions (optional)
1 teaspoon salt, dissolved in
4 cups water
1 1/2 cups italian seasoned croutons (small ones work best)
1 cup shredded cheddar cheese, divided
1/2 cup evaporated milk
1 tablespoon flour
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon oregano
1/4 teaspoon paprika
1 tablespoon butter, melted


1. Preheat oven to 325. Spray a 9-inch baking dish with nonstick cooking spray.
2. In a large saucepan over medium heat, boil the 4 cups salted water. Add eggplant (and onion, if using it) and continue to boil for 3 minutes; drain. In a mixing bowl, combine eggplant, croutons, and half of the cheese. Spoon into baking dish.
3. In another mixing bowl, combine milk, flour, salt, pepper, and oregano; pour over eggplant mixture in baking dish. Top with remaining cheese and drizzle with melted butter. Cover and bake at 325 for 20 minutes. Uncover and bake for additional 5-7 minutes to melt and brown cheese.
