Eggplant and Cheese Casserole (2nd)

2nd time i madet this, this was my
YIELDS: 1 full 9x9 aluminum pan
COMMENT: Too peppery but still taste good, right amount of eggplant, not too salty than the
CHANGES: doubled the recipe
1 1/4 k eggplant

1 c onion
1 c evaporated milk
2 T WW ---> no AP available
1/2 t salt = nstead of 1 t --->saltiness will come from cheese
1 t pepper
1 t oregano
1/2 t paprika
Eden Cheese in caserole
Quickmelt cheese on top
EQUIPMENT:
Top most level (outerside) 9x9 aluminum pan
PROCEDURE:
1. While water is semi boiling( 1/3 water), add chopped eggplant (pot was full, can't cover). Let it boil till reduce and eggplant are limp green. Add chopped onion. Turn off heat, let it sit covered
2. Croutons: Spread Garlic Flavored Margarine: sprinkle w/ pepper, paprika, salt. Toast, then cut.
3. Combine grated Eden, Croutons and drained vegetable
4. Pour combined liquid (flour didn't dissolve well into the mixture). Mix well, liquid were absorbed
5. Topped w/ grated quickmelt cheese
6. Bake 350ยบ for 30minl, didn't cover
RECIPE:

1 large eggplant, peeled and diced into 1 1/2 " cubes
1/2 cup diced onions (optional)
1 teaspoon salt, dissolved in
4 cups water
1 1/2 cups italian seasoned croutons (small ones work best)
1 cup shredded cheddar cheese, divided
1/2 cup evaporated milk
1 tablespoon flour
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon oregano
1/4 teaspoon paprika
1 tablespoon butter, melted
1. Preheat oven to 325. Spray a 9-inch baking dish with nonstick cooking spray.
2. In a large saucepan over medium heat, boil the 4 cups salted water. Add eggplant (and onion, if using it) and continue to boil for 3 minutes; drain. In a mixing bowl, combine eggplant, croutons, and half of the cheese. Spoon into baking dish.
3. In another mixing bowl, combine milk, flour, salt, pepper, and oregano; pour over eggplant mixture in baking dish. Top with remaining cheese and drizzle with melted butter. Cover and bake at 325 for 20 minutes. Uncover and bake for additional 5-7 minutes to melt and brown cheese.
