Perfect Banana Bread

YIELDS: 2 (7x3) loaf pan
COMMENT: A bit sweet. NIce texture, semi crumbly but not quite. Perfectly domed and cracked top. Achi and 2ko loved this. Moist and not wet.
RECIPE:
1 cup sugar (2/3c)
6 tbsp butter, melt
3 small or 2 large eggs (2eggs)
3 large very ripe bananas (5 bananas= .5L)
1 tsp vanilla essence
1/2 cup chopped mix of raisins & walnuts (omit)
3/4 tsp baking soda
1/4 baking powder
1/4 tsp salt

(1) Whisk together the flour, sugar, baking soda, baking powder, salt. These are the dry ingredients.
(2) Mash the bananas, add eggs to it & beat till combined. Add melted butter (room temp), vanilla, raisins-nuts mixture & beat till the batter is smooth.
(3) Add the batter onto the dry ingredients & fold till everything is combined well.
(4) Pour batter in a buttered & floured pan. Most of the batter fit comfortably in a 7'x 5' pan and I baked the rest in two 6 ounce cups. (gr and floured, easy to rmove)
(5) Bake in a 350 degrees pre-heated oven for 50 min or till knife-test comes clean. (33 min, pick's clean)
