Cheese Quick Bread

Recipe #51388

2 c sifted all purpose flour

4 t baking powder

1 1/2 t salt

1 c grated cheese

2 eggs,well beaten

1 c mlk

1/4 c melted shortening

1. Mix and Sift flour, baking powder and salt.

2. Stir in grated cheese.

3. Beat eggs and add milk and shortening to eggs!

4. Add this liquid mixture to the dry ingredients, stirring JUST ENOUGH to blend them together.

5. DO NOT OVER-MIX!

6. Pour into a"well-greased" 9x5-inch bread pan.

7. Bake at 350ºF for 45-60 minutes.

Made them into muffins. Made 8 muffins. Filled almost to the top.

Used black nonstick muffin tins, ungreased and unlined. Bake 350 (as stated) for 20min. Some didn't turn out clean when i inserted a cake taster, probably because of the cheese.

I tent the muffins with foil the last 10 min.

These are sooo salty, next time, omit the salt. I use around 1 1/2 c grated cheese instead of the stated 1 cup
