Whole Wheat Irish Soda Bread

4 c whole wheat flour
2 c all purpose flour
1 t salt
1 t baking soda
1/2 t white/brown sgar
1 c skim milk
1 t lemon juice
1. Mix milk and lemon.
2. Combine dry ingredients.
3. Add milk and lemon mixture (buttermilk may be used instead).
4. On floured bread board (I use whole wheat) knead dough for no more than a minute.
5. Shape dough into a circle with a height of about two inches.

6. Place on lightly oiled baking sheet.
7. With (sharp) floured knife, cut an x nearly halfway through the dough.
8. Bake about 40 minutes in 400F degrees degree oven.
9. Dough should sound hollow when tapped with knuckles or handle of spoon.

10. Place loaf on wire rack and let rest at least an hour before slicing.

The mixture is a bit dry. Reduce half the amount of floure. STill, the bread was stiff. For the first time, i easily knead a dough at the table Ü Added 1 t water to the dough
Place in nonstick baking sheet. and bake for 40 min. 375-400 first 10 min, reduce to 350 last 30min The bread was dry and hard.
It didn't taste as good as whole wheat bread. When cut, some parts have yellow spots (don't know what they are) Stored them in plastic while hot. I guess they would make the bread less dry. Then freeze them once they were cooled
