Cornflake Muffins

1 1/2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup sugar
2 cups corn flakes, slightly crushed (not frosted flakes)
1 1/4 cups milk
1/2 teaspoon vanilla (optional)
1 egg
1/3 cup vegetable oil
1. Stir together flour, baking powder, salt and sugar; set aside.
2. Combine crushed Corn Flakes and milk in large mixing bowl.
3. Let stand about 2 minutes or until cereal is softened.
4. Add egg and oil; beat well. Stir in vanilla.
5. Add flour mixture, stirring only until combined.
6. Portion batter evenly into 12 greased 2 1/2" muffin pan cups.
7. Bake at 400º about 20 minutes or until lightly browned.
8. Serve warm.
9. NOTE: Variation: Decrease sugar to 2 tablespoons-- Add 1/2 cup shredded monterey jack cheese with jalapeno peppers to egg mixture before adding flour mixture.
Baked for only 359º used black non stick baking pan placed at the middle rack. So it took me 30-35min to bake
Soaked the cornflakes too long in milk, for it absorbed all the liquid, and it turned out a thick paste. So i had a hard time combing the dry and the wet. Had to add 1/4c h2o just to wet the mixture. - very think batter.
Domed, but didnt' increase in volume.
Not sweet, can taste the cornflake taste
Yield: 10 muffins (black nonstick)
